Wilson is a fourth generation coffee farmer and one of the youngest producers that we’ve ever purchased from at the age of 22. He took on the massive task of managing the family’s farm, Campo Nuevo, after his brother, Denis, made the decision to migrate to the United States in 2022. This is an extremely common occurrence throughout coffee growing communities in Central America, unfortunately, as profit margins are slim to none for many smallholders in the coffee sector. In short, the Escobal mine was established despite hundreds of complaints between 2011 and 2013, citing a lack of good faith and severely inadequate environmental impact assessments. Notable effects of the operations have been collapsing houses due to subterranean mining, freshwater springs completely drying up, and fish populations dying off in nearby lakes. The culmination of years of protests led to establishing a blockade in front of the mine’s entrance in 2017, and the government finally recognizing the rights of the Xinca peoples, ruling in their favor, and shutting down the mine. Though the mine is still closed today, Cafe Colis Resistencia remains active in their resistance. They’ve established encampments in the towns of Casillas and Mataquescuintla, keeping watch 24 hours a day and stopping all trucks entering the area that may be carrying mining material. \u003c\/em\u003e\u003c\/p\u003e\n\u003cp class=\"\"\u003e\u003cem\u003eDespite the many challenges facing Cafe Colis Resistencia, they’re a collection of extremely passionate and dedicated people who are growing absolutely delicious coffee. Semilla’s work with them has always been to primarily assist in the development of an international market in North America, and to do so despite the fact that their coffee quality may not quite be as high as it could be. Semilla has made big efforts to assist in the transition into specialty coffee over the last few years. They share, “Our goal with this is not only quality - it stems from our belief that part of the cycle of oppression in coffee comes from a lack of access to information that keeps small producers dependent on local buyers and other gatekeepers in the industry who can dictate price and set limits on a producer’s possibilities. As we see this group taking steps every year towards being able to independently process, market, and sell their own coffee, it allows us to feel confident that their success is not dependent only on a single buyer group who wishes to support them and puts them in a better place to advocate for themselves, both locally and internationally.\u003c\/em\u003e\u003c\/p\u003e\n\u003cp class=\"\" id=\"yui_3_17_2_1_1713364206553_591\"\u003eThis is a project built on collaboration, trust, and risk-sharing. Though this service has helped tremendously in the first few years of exporting internationally, issues continue to emerge. Prices are rising each season, and the output is generally quite inconsistent.\u003c\/p\u003e\n\u003cp class=\"\"\u003eWilson’s coffee is processed, using a communal depulper, and dried at his home on raised beds. Ripe cherries are first sorted and floated to remove defects. They’re then stored in sealed plastic bags under shade for 48 hours to begin the fermentation process in cherry. The cherries are then depulped and the wet parchment is put out to dry raised beds for 15 - 17 days.\u003c\/p\u003e\n\u003ch5\u003eBrewing\u003c\/h5\u003e\n\u003cp class=\"\"\u003eWilson Zuleta is a straightforward coffee that benefits from relatively tighter grind sizes. Aim for a brew ratio around the 1:16 - 1:17 (coffee:water) range to accentuate the big body and heavy sweetness this coffee has to offer. Nestled in the highlands of the Odo Shakiso woreda, the Suke Quto Farm is a totally wild, organic treasure chest of regional landraces.  These old varieties, Kurume and Wolisho, were originally selected from the forest and have been propagated for decades throughout Gedeo and Guji.  Overseeing the entire operation is Tesfaye Bekele -  an agronomist, horticulture specialist, environmentalist, and visionary.  Check out \u003c\/span\u003e\u003ca href=\"https:\/\/www.trabocca.com\/our-stories\/this-is-the-story-of-guji-coffee\/\"\u003e\u003cspan\u003ethe story of Guji coffee\u003c\/span\u003e\u003c\/a\u003e\u003cspan\u003e \u003c\/span\u003e\u003cspan\u003eto learn more about Tesfaye’s pioneering role in establishing coffee production in the Guji region.   \u003c\/span\u003e\u003c\/p\u003e\n\u003cp dir=\"ltr\"\u003e\u003cspan\u003eIn 1998, a massive wildfire destroyed nearly 5,000 acres of land throughout Odo Shakiso and three other nearby woredas.  Out of a desire to preserve the forest and save it from transforming into a new mining operation, Tesfaye took it upon himself to distribute coffee and shade tree seedlings to a dedicated group of 170 outgrowers.  Together they were able to start regrowing the area of forest that surrounds the Suke Quto Farm.  With this, Tesfaye was able to accomplish his dream of developing environmentally friendly coffee and sustaining the local community with a reliable income.  The Suke Quto Farm is fully organic, with never any chemical fertilizer or pesticide use. The canopy cover from shade trees is nearly 60% - coffee plants here grow extremely tall and slow.  Tesfaye never ceases to inspire, with his focus on ecological conversation, clear desire to produce high quality coffee, and deep philosophical wisdom.  In his words: “We are not only buying the coffee.  We are protecting the forest and buying the nature”.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp dir=\"ltr\"\u003e\u003cspan\u003eSuke Quto Farm and processing station both exhibit an extreme attention to detail, and the results are stunning each season.  A clean mouthfeel allows soft floral and ripe fruit flavors to shine - think orange blossom, dried apricot, and nectarine.  Meanwhile, a lingering dark honey and vanilla sweetness balances out the flavors, transforming them into a silky citrus marmalade.  It’s a perfect representation of coffee from the Guji region, and a beautiful gateway into the more fruit-forward, complex coffees we purchase from Ethiopia. We sell our coffee to them every year and they are distributing it throughout the world. Trabocca is very serious about quality control and brought us to the level at which we are now, where we are very proud of our product.”  Trabocca covers the cost of organic certification, and if certain quality standards are met, gives additional premiums under their “Operation Cherry Red” (OCR) program.\u003c\/span\u003e\u003c\/p\u003e\n\u003ch5\u003eProcessing\u003c\/h5\u003e\n\u003cp class=\"\"\u003e\u003cspan\u003e\u003cmeta charset=\"UTF-8\"\u003eThe Suke Quto station has been implementing quality processing protocols since day one: careful cherry selection, 48-hour fermentation in concrete tanks, washing in extended channels that provide for density separation, and properly managed drying on raised beds.  Suke Quto continues to thrive and expand its reach; It’s processed and exported by Ture Waji and his rapidly growing company, Sookoo Coffee. \u003c\/span\u003e\u003c\/p\u003e\n\u003cp dir=\"ltr\"\u003e\u003cspan\u003eYou’ve likely heard us mention Ture before, as he’s who we’ve been purchasing the bulk of our natural processed Ethiopian coffees from the past few seasons - like Daannisa, Bookkisa, and Biranu Dulo from previous years. We’ve been consistently impressed with every coffee we’ve tasted from Sookoo, and we’re thrilled to continue diving deeper and strengthening our relationship with each passing year.  They primarily specialize in natural processed coffees at the moment (though have recently expanding to washed lots as well!) working with five groups of farmers within the Odo Shakiso woreda of the Guji Zone. Sookoo focuses on small groups and providing education for the farmers - teaching proper farm maintenance, best picking practices, etc. \u003c\/span\u003e\u003c\/p\u003e\n\u003cp dir=\"ltr\"\u003e\u003cspan\u003eThis is the sixth season that Ture has kept coffees separate from growers with larger than average farms. Biranu Dulo owns 4.5 hectares of land, which is roughly double the average in Guji, and he can produce around 50 x 60kg bags of green coffee per year.  Currently, we’re purchasing around half of his total volume. We established a premium price to Ture that allowed him to cover his higher cherry pricing to Biranu and also give a second payment later in the season. Full transparency in the Ethiopian coffee supply chain has historically been quite complicated.  Due to complex regulations on the commodities market, coffee from a single farm would have been impossible to purchase pre-2020. This is why many of our past Ethiopian offerings were named after the washing station itself and consisted of hundreds of smallholder farmers’ coffee.  Long story short,  policy changes have opened the market in a way that now allows increased transparency and the new options to form relationships directly with producers. \u003c\/span\u003e\u003c\/p\u003e\n\u003cp dir=\"ltr\"\u003e\u003cspan\u003eAs we’ve come to expect, this natural processed lot from Biranu Dulo is incredibly clean, complex, and fruit-forward.  The acidity is juicy and mouth-watering, like blueberries and raspberries.  The saturated fruit flavors and white sugar-like sweetness produce a very sweet, silky body.  Layers of milk chocolate and vanilla round out the experience to keep the coffee beautifully balanced. Ture explained how he had decided to start his own company with a laser focus on quality and transparency. And the rest is history! Ever since that first season, we’ve been blown away by nearly all samples we’ve tasted. They were (and still are) some of the cleanest natural processed coffees we’ve ever experienced, hands down. It’s no surprise that in specialty coffee circles he’s been lovingly nicknamed \u003c\/span\u003e\u003cspan\u003eThe King of Guji. \u003c\/span\u003e\u003c\/p\u003e\n\u003cp dir=\"ltr\"\u003e\u003cspan\u003eOur primary relationship for all things Sookoo related is directly with Ture. After coffees are selected and prices are agreed upon each year, we then transition into working closely with Tim Hill at Atlantic Specialty Coffee. They handle the logistics of moving the coffee across the ocean, importing, and warehousing for us throughout the year.\u003c\/span\u003e\u003c\/p\u003e\n\u003ch5\u003eProcessing\u003c\/h5\u003e\n\u003cp class=\"\"\u003eThe strict attention to detail in the drying stage is what separates Ture Waji’s coffees from the rest of the pack. There are two key components to his technique - (a) lots of moving and turning of the coffees, a minimum of six times per day and (b) a very shallow bed of cherries, a maximum of only one inch.\u003c\/p\u003e\n\u003cp class=\"\"\u003eBecause of the nature of drying the fruit around the seed, coffee processed this way is inherently packed with intense fruit flavors; but because of these specific protocols, coffees from Sookoo are particularly crisp and clean. You get all of the big fruit juice flavors and none of the murky over-fermented or over-ripe fruit flavors that can sometimes accompany a naturally processed coffee.\u003c\/p\u003e\n\u003ch5\u003eBrewing\u003c\/h5\u003e\n\u003cp class=\"\"\u003eBrewing this coffee is quite versatile! Any way you slice it, you’re in for a mouthful of fruit flavor and a lot of natural sweetness. Finer grinds tend to bring out a fuller body and more intense flavors. You’ll find the flavor becomes more concentrated, like raspberry jam and chocolate.
